Fukuoka is better known for sake and ramen than for shochu. It makes barley shochu on the Chikugo plain, which is barley country. Several long-aged unfiltered barley bottlings come from there.
It is also a centre for kasutori shochu, distilled from sake lees. A sake brewery that presses its rice ends up with kasu. A distillery next door turns it into a spirit carrying the ginjo aroma of the original sake.
