Fukuoka is better known for sake and for ramen than for shochu, but it makes barley shochu on the Chikugo plain, which is barley country, and it is where several long-aged unfiltered barley bottlings come from.

It is also a centre for kasutori shochu, distilled from sake lees. A sake brewery that presses its rice ends up with kasu, and a distillery next door turns it into a spirit that carries the ginjo aroma of the original sake. At least one bottle in this catalogue is a sake brewery in Niigata sending its lees to a Fukuoka distillery to be distilled, because the licence and the still are here.
