Saga佐賀県
Barley grown, koji made and shochu distilled, all inside one prefecture.
9 bottles here · 3 producers · Mugi (barley)
Saga is a small producer with an unusual argument. Barley shochu where every ingredient comes from inside the prefecture, grown on farms near Imari and distilled in Arita, the porcelain town.
The Mizu range here is bottled at 35 percent rather than the usual 25. The barley one is made on black koji, where the Oita style uses white. Both choices are aimed at cocktails: more structure, more aroma, and enough alcohol to survive ice and a mixer. The other Saga bottles here are ordinary 25 percent bottlings.

Others who distil here
The Japan Sake and Shochu Makers Association lists these as distilling here. We hold no bottle from any of them, so there is nothing to recommend and no tasting note to give. What follows is a record that they exist, with their own site where the association publishes one.
