The Japan Sake and Shochu Makers Association lists 6 shochu makers in Ehime working from sake lees. Most of them are sake breweries that also distil, which is what shochu usually is outside Kyushu: a second product rather than the house's reason for existing.
They are named below because a directory of who makes what is worth publishing whether or not we hold any of it. A bottle gets a page here once somebody has published enough about it to write one that is not guesswork, and for most of these that has not happened yet.
